Выпускник Московской консерватории, класс профессора Михаила Воскресенского.
Начал свою карьеру как пианист в 1979 после успешного выступления на международном конкурсе пианистов «Виана да Мота» в Лиссабоне (ІІ премия).
В 1982 поступил на дирижерское отделение в Санкт-Петербургскую консерваторию (класс профессора Ильи Мусина). В 1984 году был приглашен Валерием Гергиевым вторым дирижером Армянского филармонического оркестра, а через три года стал его художественным руководителем и главным дирижером.
Ваг Папян дирижировал Английским камерным оркестром в Барбикан Центре в Лондоне, Новым японским филармоническим, Российским, Белградским симфоническими оркестрами и симфоническим оркестром г. Трондхейм, Новым Русским симфоническим оркестром, Израильским оркестром «Симфониетта Беер-Шева», Израильским Северным оркестром Хайфы, Иерусалимским симфоническим оркестром, Израильским симфоническим оркестром «Ришон ЛеЗион» и др. оркестрами мира.
